Resistant Starch

What it actually is

Found in green bananas, cooked-and-cooled potatoes, cooled rice, oats, and legumes. Resistant starch ferments in the gut, feeding beneficial bacteria and producing short-chain fatty acids that improve insulin sensitivity and gut health.

Why it matters for Pakistanis

Cooked white rice has a GI of 73; cool it overnight in the fridge, reheat tomorrow, and the GI drops to 53. Same for boiled potato. Free hack for diabetics.
